Apple Fritter Muffins

INGREDIENTS:

 

1 recipe Modern Bread and Bagel Vanilla Cake and Muffin Mix

 

​For the Streusel:
1/4 cup brown sugar, tightly packed
2 tsp cinnamon
1.5 Tbsp butter, melted


For the Apple Filling:
1 apple, peeled and rough chopped
1/3 cup granulated sugar
1 tsp


For the Icing:
2 tbsp cup milk
1 cup powdered sugar

Preheat oven to 350 degrees F. Prepare your muffin pan with muffin liners.

Toss cubed apples with 2 tbsp sugar and 1 tsp cinnamon in a separate bowl. Set aside.

Mix 1/4 cup brown sugar and 2 tsp cinnamon in a small bowl. Add melted butter and mix together to make a streusel. Set aside.

Mix cake batter following instructions on the back of the bag. Dump out the contents of the bag. Add eggs, oil and milk to the bowl, and mix by hand until batter is smooth.

Fill each muffin tin with 2 tbsp batter, sprinkle apple mixture on top of the batter, sprinkle about 1 tbsp of the brown sugar mixture on top of the apple layer, and repeat until reaching the top of the muffin liner. Use a knife or toothpick to gently swirl the apple mixture into the batter.

Bake until toothpick inserted into the middle of the muffins comes out clean, about 17 min. Let muffins cool.

Icing - combine and mix powdered sugar with 3 tbsp milk. Add more milk or powdered sugar to reach desired consistency. Drizzle glaze on top of muffins after they are cooled.
